When using a prepared cake mix, usually the recipe calls for three eggs, 1/2 cup oil and 1 1/3 cup water. At a cake decorating course the instructor told us to omit one egg and the oil to give the the cake a little more firmness making it easier to ice. I do the same for all prepared cake mixes now whether I'm icing them or not and they taste just as good and I don't need to use as many ingredients. :)

I'm going to try this, because my cakes always break up when I try to ice them, and I never did get the hang of doing a 'crumb layer.' BTW, I often substitute apple sauce for the oil! BTW again, I'm Mom2fur and my blog is sortafrugal.blogspot.com

Thanks for the tip...but um, if you omit all the oil will that cause the cake to be drier?
