Making horseradish
Oct. 20th, 2008 09:40 pmStefan gave me some horseradish plants earlier on this spring so I put them up by the garage. You are supposed to harvest them in the months with R so I was going to wait until September to make horseradish sauce but that month and almost all of October slipped away before I got around to picking and processing it.

I ended up with about 6 cups of chopped horseradish.

For a cup of chopped horseradish I added 1/2 C vinegar, 1 TBSP of sugar, 1/4 tsp of salt, and 1/2 C of sourcream to make it creamy horseradish. And, wow, is it ever strong. You chop up the horseradish in the blender first, turn it off, and then take a spatula and push it down the sides. Do NOT put your face over the top of the blender while you are doing that step because the smell is so strong that it will hurt your senses. :P I haven't felt anything that painful for a while. It would clear you right out if you had a cold but I still do not recommend it as a treatment. LOL!

9 C of creamy horseradish and I have no idea how we are going to use all of it up. LOL! It should keep in the fridge for a while.
